Fried Food Threatening Prostate

According to U.S. researchers, a man who at least once a week eating fried foods like French fries dipped, fried chicken, and donuts are at higher risk of prostate cancer. Researchers in the Public Health Sciences Fred Hutchinson Cancer Research Center in Seattle who published their findings in the online edition of the Prostate on January 17 did not investigate the association, but suspect it may be due to deep frying release compounds that could potentially cause cancer.

According to the director at the cancer research center, Dr. Janet L. Stanford, the relationship between prostate cancer and some fried foods appear to be limited to the highest levels of consumption - defined in the study more than once a week - which suggests that regular consumption of fried foods carry a particular risk of developing prostate cancer.

For this study, Stanford and his colleagues examined data on 1549 men are diagnosed with prostate cancer and 1492 healthy men the same age who lived in the Seattle area.
Once a week or more

The black man and a white man aged 35-74 years it has taken part in two population-based case-controlled study in which they completed a questionnaire that included questions about diet how often they ate fried foods dyes. The researchers found that men who ate french fries, fried chicken, fried fish and / or donuts at least once a week have an increased risk of prostate cancer between 30% - 37%. They also found that men were more likely to eat foods slightly higher risk for aggressive prostate cancer.

Even when other factors that may mempegaruhi calculated risk, such as age, family history of prostate cancer, race, body mass index, and history Skiring PSA, the link remains the same.

Stanford suggests that it may have to do with what happens to food when cooking. At high enough temperatures when fried, the compounds are potentially carcinogenic, including acrylamide, heterocyclic amines, polycyclic amromatik hydrocarbons, aldehydes and acrolein increases when oil is used and heated repeatedly.

Acrylamide is found in carbohydrate-rich foods such as french fries, heterocyclic amines and polycyclic hydrocarbons amromatik in meat when it reaches high temperatures. Aldehydes are organic compounds found in perfumes and acrolein is a chemical in the herbicide.

Fried is also known to contain a lot of advanced glycation endproducts (AGEs), a group of compounds associated with chronic inflammation and oxidative stress, a condition that is associated with cancer. A fried chicken breasts for about 20 minutes had about 9 times more AGEs compared boiled for one hour, the researchers said.
The first study

Previous studies have shown an association between prostate cancer and the food is heated to high temperatures, such as roasts, but the authors believe that they were the first to investigate the potential link with fried food. In addition, there have been previous evidence that the consumption of fried foods was also associated with other cancers, namely breast, lung, pancreas, head and neck, and esophagus.

Because fried food eaten outside the home, especially, may increase the incidence of prostate cancer can be a sign of high consumption of fast food in general, the researchers wrote, citing a dramatic increase in the consumption of fast food in the U.S. in recent decades.
